Chocolate Zucchini Bread

When your garden grows a large amount of zucchini, make bread.  Chocolate zucchini bread to be exact.  Very few things from our kitchen receive as many unsolicited compliments as this bread. Chocolate Zucchini Bread 3 eggs or 6 egg whites 1 cup canola oil 2 cups granulated sugar 2 teaspoons vanilla extract 2 1/2 cups flour 1/2 cup cocoa powder 3 teaspoons baking soda 1 teaspoon baking powder 1 teaspoon cinnamon 1/2 teaspoon salt 2 cups grated zucchini 3/4 cup chopped nuts (optional) Preheat oven to 350 degrees.  Mix ingredients with spoon in order listed and pour batter into greased loaf pans.  Bake 50-60 minutes or until toothpick inserted in center comes out clean.  Enjoy!

Wait in Expectation

Do not be anxious about anything, but in every situation, by prayer and petition, with thanksgiving, present your requests to God. (Philippians 4:6) When I have a busy day looming, my tendency is to tell God all I have to do and ask him to help me get it done.  Instead, I should lay my requests before Him and wait in expectation. In their hearts humans plan their course, but the Lord establishes their steps. (Proverbs 16:9)
